Description

This chicken with pine nuts and raisins is a warm, comforting one-pan dish combining tender chicken with sweet raisins, crunchy pine nuts, and aromatic spices. Perfect for a simple yet flavorful family dinner.


Ingredients

Scale
  • 4 chicken breasts
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1/2 cup raisins
  • 1/3 cup pine nuts
  • 1 cup chicken broth
  • 1 tsp cinnamon
  • 1/2 tsp paprika
  • Salt and pepper
  • Fresh parsley

Instructions

  1. Heat oil and season chicken.
  2. Sear chicken until golden and set aside.
  3. Cook onion until soft.
  4. Add garlic and cook briefly.
  5. Stir in raisins and pine nuts.
  6. Add spices and mix well.
  7. Pour in chicken broth.
  8. Return chicken to pan.
  9. Cover and simmer for 20 minutes.
  10. Serve with sauce and garnish with parsley.

Notes

Toast pine nuts before use for deeper flavor. Soak raisins if dry. Serve with rice or couscous. Adjust seasoning to taste.
