- 800g chicken thighs or drumsticks
- 1 onion, chopped
- 3 garlic cloves
- 2 tbsp olive oil
- 1 tsp cinnamon
- 1 tsp ginger
- 1/2 tsp turmeric
- 1 tsp paprika
- 250ml chicken broth
- 1 tbsp honey
- 40g pine nuts
- Fresh parsley or coriander
- Salt to taste
- Black pepper to taste
Instructions
- Brown chicken in oil.
- Cook onion until soft.
- Add garlic.
- Stir in spices.
- Return chicken.
- Add broth and honey.
- Simmer 40 minutes.
- Toast pine nuts.
- Garnish and serve.
Notes
Toast pine nuts before adding. Add dried fruits for sweetness. Store leftovers in fridge for up to 3 days.
