3 cups shredded rotisserie chicken (skin removed)
1/2 cup unsalted butter
1 cup yellow onion, finely diced
1 cup carrots, sliced into rounds
1 cup frozen peas, slightly thawed
1/2 cup all-purpose flour
3 cups low-sodium chicken stock
1/2 cup heavy cream
2 packages refrigerated pie crusts


Instructions

Preheat your oven to 400°F (200°C).
Melt the butter in a large Dutch oven over medium heat.
Sauté the diced onions and carrots until they soften and turn translucent.
Whisk in the flour and cook for two minutes to remove the raw flour taste.
Slowly pour in the chicken stock while whisking constantly to prevent lumps.
Stir in the heavy cream and simmer until the gravy reaches a glossy, thick consistency.
Fold in the shredded chicken and peas, then remove from heat.
Place one pie crust into the bottom of a pie dish.
Pour the chicken and vegetable mixture into the crust.
Top with the second pie crust, crimp the edges to seal, and cut small vents for steam.
Bake for 30 minutes or until the crust is golden brown and the filling is bubbly.

Notes
