Ingredients
12–15 lasagna noodles (no-boil preferred)
4 cups shredded rotisserie chicken
15 ounces ricotta cheese
3 cups shredded mozzarella cheese
1 cup finely grated Parmesan cheese
3 cups whole milk
4 tablespoons unsalted butter
4 tablespoons all-purpose flour
2 cups fresh spinach, chopped and squeezed dry
2 cloves garlic, minced
1 teaspoon dried Italian herbs
Salt and black pepper to taste
Instructions
Preheat your oven to 375°F (190°C).
Prepare the béchamel sauce by melting butter in a saucepan over medium heat.
Whisk in the flour until smooth and cook for 1 minute to create a roux.
Gradually whisk in the milk and simmer until thickened; season with salt and pepper.
In a bowl, combine the shredded chicken, half of the ricotta cheese, the spinach, garlic, and Italian herbs.
Spread a thin layer of béchamel sauce at the bottom of a 9×13 inch baking dish.
Place a layer of lasagna noodles on the bottom of the dish.
Spread a portion of the chicken and spinach mixture over the noodles, then dollop with remaining ricotta.
Pour some béchamel sauce over the filling and sprinkle with a layer of mozzarella and Parmesan.
Repeat the layers until all ingredients are used, finishing with a generous topping of mozzarella and Parmesan.
Cover the dish with foil and bake for 30 minutes.
Remove the foil and bake for another 15 minutes until the cheese is bubbling and golden brown.
Notes
Ensure the spinach is thoroughly squeezed dry to prevent the lasagna from becoming watery. If using traditional boil-ready noodles, cook them al dente before assembling. Store leftovers in an airtight container for up to 3 days.
