Description

A fresh and creamy Chicken Caesar Salad made with juicy chicken, crisp romaine lettuce, parmesan cheese, crunchy croutons, and a rich homemade Caesar dressing.


Ingredients

Scale
  • 2 chicken breasts
  • 1 romaine lettuce, chopped
  • 1/2 cup parmesan cheese
  • 1 cup croutons
  • 2 tbsp olive oil
  • Salt and pepper
  • 1/2 cup mayonnaise
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • 2 tbsp olive oil (dressing)
  • 2 tbsp parmesan (dressing)

Instructions

  1. Season and cook chicken until golden and cooked through.
  2. Let chicken rest, then slice.
  3. Mix dressing ingredients until creamy.
  4. Chop romaine lettuce.
  5. Combine lettuce, chicken, croutons, and parmesan.
  6. Add dressing and toss gently.
  7. Serve immediately.

Notes

Add dressing just before serving to keep lettuce crisp. Do not overdress. Chicken can be grilled or pan-cooked for best flavor.
