Ingredients
1.5 lbs chicken breasts
2 heads broccoli
1.5 cups uncooked long-grain rice
1/4 cup melted butter
3 tbsp flour
1/2 cup heavy cream
6 oz grated cheddar-cheddar blend (80%/20%)
Instructions
Preheat oven to 375°F (190°C).
Season chicken with salt and pepper and place in a greased casserole dish.
Cook rice in unsalted water for 20-25 minutes. Set aside.
Brown chicken in a skillet, pressing gently to ensure even cooking.
Steam broccoli florets and stems until 50% done (1-2 minutes).
In a saucepan, blend melted butter, flour, and cream until golden roux forms.
Layer cooked chicken, rice, and broccoli in the casserole. Pour sauce over the mixture.
Top with grated cheddar cheese blend.
Bake for 25 minutes until the top is bubbly and golden.
Let rest for 5 minutes before serving.
Notes
For best browning, press chicken to remove excess moisture.
Use 81% milkfat cheddar for optimal melt.
Substitute boneless thighs for chicken breasts if desired.
Replace broccoli with cauliflower florets if needed.
For a lighter version, substitute whole milk for heavy cream.
