Description

This comforting cheeseburger meatloaf bridges the gap between a classic diner burger and a hearty family dinner. Featuring a juicy ground beef base infused with aromatic onions and garlic, this loaf hides a molten core of melted sharp cheddar cheese. Finished with a tangy tomato glaze, it delivers the iconic burger experience in every slice without the need for buns. It is a perfect, stress-free weeknight meal that yields tender, savory results that the whole family will love.

Ingredients

Scale

2 lbs Ground Beef (85/15)
1.5 cups Sharp Cheddar Cheese, shredded
1 cup Breadcrumbs
2 Large Eggs
1 cup Yellow Onion, finely diced
0.5 cup Ketchup, divided
1 tsp Garlic Powder

Instructions

Preheat your oven to 375 degrees Fahrenheit.
Line a standard loaf pan with parchment paper for easy removal.
In a large bowl, combine ground beef, breadcrumbs, diced onions, eggs, garlic powder, and half of the ketchup.
Mix by hand until just combined, being careful not to overwork the meat.
Press half of the meat mixture into the bottom of the prepared loaf pan.
Spread the shredded cheddar cheese evenly over the center, leaving a small border around the edges.
Place the remaining meat mixture over the cheese and press down to seal the edges completely.
Spread the remaining ketchup over the top of the meatloaf.
Bake for 60 minutes or until the internal temperature reaches 160 degrees Fahrenheit.
Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

Ensure the beef mixture fully encases the cheese to prevent it from leaking out during the bake.
Letting the meatloaf rest is crucial for keeping it moist and making it easier to slice.
Store leftovers in an airtight container for up to 3 days.
