Ingredients
2 large heads romaine lettuce, washed and dried
3 garlic cloves, minced into a paste
3 tablespoons fresh lemon juice
1/2 cup extra virgin olive oil
1/2 cup Parmesan cheese, shaved or grated
2 cups ciabatta or rustic sourdough bread cubes
Sea salt to taste
Freshly cracked black pepper to taste
Instructions
Preheat oven to 375°F.
Toss bread cubes in olive oil and bake until golden brown and crisp.
In a small bowl, whisk minced garlic with lemon juice and a pinch of salt.
Let the garlic mixture rest for 5 minutes to mellow the flavor.
Slowly stream the olive oil into the garlic mixture while whisking constantly to form a thick emulsion.
Stir in half of the Parmesan cheese and black pepper until combined.
Place washed romaine in a large bowl, drizzle with dressing, and toss until well-coated.
Top with house-made croutons and the remaining Parmesan cheese before serving.
Notes
Ensure the romaine is completely dry after washing so the dressing clings effectively. Use a high-quality Parmesan or Pecorino for the best flavor. Store dressing separately from the greens if preparing in advance to keep the leaves crisp.
