Description
A hearty one-pan meal combining tender chicken, broccoli, and rice in a rich cheddar sauce. Ideal for busy dinners or batch cooking, this casserole balances flavor and texture with crispy chicken, creamy cheese, and fresh veggies.
Ingredients
1.5 lbs boneless chicken thighs (can substitute with breast)
2 cups broccoli florets (fresh or frozen)
1 cup long grain rice (already cooked)
2 cups shredded sharp cheddar cheese
1 cup heavy cream
1/4 cup all-purpose flour
4 slices smoked turkey (optional, as bacon substitute)
Instructions
Cook rice according to package instructions and set aside
Blanch broccoli in boiling water for 1 minute, drain and set aside
Season chicken thighs with salt and sear in olive oil until golden brown on all sides
In a separate bowl, mix heavy cream, shredded cheddar, all-purpose flour, and salt until smooth
Add garlic powder and onion powder to the cooled rice for extra flavor
In a 9×13 inch baking dish, layer cooked chicken, broccoli, and seasoned rice
Pour the cheese sauce over the mixture
Top with additional cheddar cheese for a golden-brown finish
Broil on high for 5 minutes until bubbly
Let rest for 10 minutes before serving
Notes
Use day-old rice for better texture and moisture absorption
Add garlic powder to rice during cooking for deeper flavor
Blanch broccoli briefly to preserve its vibrant green color
Stir the cheese sauce continuously while mixing to avoid lumps
Optional smoked turkey can replace traditional bacon if desired
Avoid using raw rice to ensure even cooking
Replace heavy cream with milk for a lighter version
