Ingredients
2 cups pecans, roughly chopped and toasted
1.5 cups dark brown sugar, packed
1 cup light corn syrup
3 large eggs, room temperature
1.5 tsp non-alcoholic bourbon extract
4 tbsp unsalted butter, melted and cooled
1 standard 9-inch pie crust, blind-baked
Instructions
Preheat your oven to 350°F.
Blind bake the pie crust for 10 minutes and cool on a wire rack.
In a large bowl, whisk together eggs, brown sugar, and corn syrup until smooth.
Stir in the melted butter and the non-alcoholic bourbon extract.
Fold in the toasted pecans using a silicone spatula.
Pour the filling into the prepared pie shell.
Bake on the center rack for 50 to 55 minutes until the center is set.
Cool completely on a wire rack before serving to ensure the filling sets properly.
Notes
Ensure the crust is fully cooled before adding the filling to prevent a soggy bottom. Using room temperature eggs helps the filling emulsify better. Store leftovers in the refrigerator for up to 3 days and serve at room temperature or slightly warmed.
