Perfect for spring and summer meals, this colorful salad is quick to prepare and pairs beautifully with grilled chicken, fish, or light pasta dishes.
Ingredients
- 6 cups fresh baby spinach
- 2 cups fresh strawberries, sliced
- 1/3 cup red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/2 cup walnuts or pecans, chopped
- 1/2 avocado, sliced (optional)
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt to taste
- Black pepper to taste
Instructions
- Wash and thoroughly dry the baby spinach and place it in a large salad bowl.
- Slice the strawberries and add them over the spinach.
- Thinly slice the red onion and sprinkle it into the salad.
- Add the chopped walnuts or pecans for crunch.
- Sprinkle crumbled feta cheese evenly over the salad.
- In a small bowl whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Add sliced avocado on top if desired and serve immediately.
Notes
For extra flavor, toast the walnuts or pecans in a dry skillet for 2–3 minutes before adding them to the salad. If red onion tastes too strong, soak slices in cold water for 5 minutes before adding. Store dressing separately if preparing the salad ahead to keep spinach fresh and crisp.
