This tender, juicy halal-friendly meatloaf brings rich flavor and satisfying comfort. Using ground beef, aromatics, and a sweet-spicy glaze, it’s perfect for any occasion.
Ingredients
1.5 lbs ground beef (85% lean), or ground turkey
1 cup breadcrumbs (Panko or gluten-free)
1 small onion, finely chopped
2 cloves garlic, minced or pressed
1 tbsp Worcestershire substitute (alcohol-free tamari or soy sauce)
1 cup ketchup (for glaze)
1 tbsp brown sugar (for glaze)
1 tbsp apple cider vinegar (or white vinegar)
1 tbsp olive oil or neutral oil, for greasing
Instructions
Preheat oven to 375°F (190°C)
In a large bowl, combine ground beef (or turkey), breadcrumbs, chopped onion, minced garlic, and Worcestershire substitute using a spatula. Mix just until incorporated.
Press the meat mixture firmly into a greased 9×5 inch loaf pan to shape the loaf.
In a small bowl, mix ketchup, brown sugar, and apple cider vinegar. Brush the glaze evenly over the top of the meat mixture.
Place the loaf in the preheated oven and bake for 1 hour 15 minutes, or until an instant-read thermometer inserted into the center reads 160°F.
Remove the meatloaf from the oven and let rest for 10 minutes before slicing and serving.
Notes
Use parchment paper to line the loaf pan for easier cleanup and better browning.
If the mixture feels too dry, add 2 tbsp of beef broth or mayonnaise to improve moisture.
Avoid overmixing the meat to keep the loaf tender.
For a spicier glaze, add a pinch of cayenne pepper or smoked paprika.
