Description
This reliable banana bread recipe yields a dense, moist crumb with deep, caramelized banana flavors. By using room temperature ingredients and a touch of Greek yogurt for acidity, this bread achieves the perfect bakery-style rise and tender structure. It is a comforting, simple-to-make treat that stays fresh for days and is free from any alcohol or pork products.
Ingredients
4 medium ripe bananas, mashed
2 cups all-purpose flour
1/2 cup unsalted butter, melted and cooled
3/4 cup brown sugar, packed
2 large eggs, room temperature
1/4 cup Greek yogurt
1 teaspoon baking soda
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan thoroughly.
Mash the bananas in a large mixing bowl using a fork until mostly smooth.
Stir the melted butter into the mashed bananas until well combined.
Whisk in the brown sugar, eggs, vanilla extract, and Greek yogurt until the mixture is uniform.
Fold the flour, baking soda, cinnamon, and salt into the wet ingredients using a spatula just until the flour streaks disappear.
Pour the batter into your prepared loaf pan.
Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Use bananas with dark, spotty skins for the best sweetness. If you do not have Greek yogurt, sour cream is an excellent substitute. Store in an airtight container at room temperature for up to 3 days.
