Ingredients
- 1 pie crust (9-inch)
- 1 bunch fresh asparagus, trimmed and chopped
- 4 large eggs
- 1 cup heavy cream
- 1/2 cup whole milk
- 1 cup shredded Gruyère cheese
- 1/4 cup grated Parmesan cheese
- 1 small shallot, finely chopped
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground nutmeg
- 1 tablespoon chopped fresh chives
Instructions
- Preheat the oven to 375°F (190°C) and place the pie crust into a 9-inch pie dish.
- Prick the bottom of the crust with a fork and pre-bake for 10 minutes.
- Heat olive oil in a skillet over medium heat and sauté the chopped shallot for 2 minutes.
- Add chopped asparagus and cook for 3–4 minutes until slightly tender.
- In a mixing bowl whisk together eggs, heavy cream, milk, salt, pepper, and nutmeg.
- Spread the shredded Gruyère cheese evenly over the pre-baked crust.
- Add the asparagus and shallot mixture over the cheese.
- Pour the egg custard over the filling slowly.
- Sprinkle Parmesan cheese and chopped chives on top.
- Bake for 35–40 minutes until the center is set and lightly golden.
- Allow the quiche to cool for 10 minutes before slicing and serving.
Notes
Use thin asparagus for the most tender texture. You can substitute Swiss cheese or mozzarella if Gruyère is unavailable. This quiche stores well in the refrigerator for up to three days and reheats beautifully in the oven. For extra flavor, add cooked bacon or mushrooms.
