Ingredients
2.5 cups all-purpose flour
1 cup unsalted butter, cubed and cold
4 large Granny Smith apples, peeled and thinly sliced
3 large Honeycrisp apples, peeled and thinly sliced
0.75 cup granulated sugar
1.5 tsp ground cinnamon
1 tbsp lemon juice
1 pinch salt
Ice-cold water as needed
Instructions
Combine flour and a pinch of salt in a large chilled bowl.
Cut cold butter into the flour using a pastry cutter until crumbly.
Add ice-cold water one tablespoon at a time until the dough holds its shape.
Divide into two discs, wrap in plastic, and refrigerate for one hour.
Toss apple slices with sugar, cinnamon, and lemon juice in a large bowl.
Roll out the first dough disc to 12 inches and place in a 9-inch pie dish.
Fill the crust with the apple mixture, mounding the center slightly higher.
Roll out the second disc and cover the pie, crimping the edges to seal.

Notes
Ensure the butter remains as cold as possible throughout the process to guarantee a flaky crust. If the edges of the crust brown too quickly, cover them with aluminum foil for the remainder of the baking time.
