2.5 lbs Beef Chuck Roast, cut into 1.5-inch cubes
3 large Carrots, peeled and thick-sliced
4 medium Potatoes, Yukon Gold or Russet
4 cups Beef Broth, low sodium
2 cups All-Purpose Flour
4 tsp Baking Powder
1 cup Whole Milk
1 tbsp Fresh Thyme
Oil for searing
1 Onion, chopped
2 cloves Garlic, minced
Salt and Pepper to taste


Instructions

Toss beef cubes in seasoned flour until evenly coated.
Heat oil in a large Dutch oven over medium-high heat and sear beef in batches until browned.
Remove beef and sauté chopped onions and garlic until fragrant.
Deglaze the pan with a splash of beef broth, scraping up all browned bits from the bottom.
Return beef to the pot, add remaining broth, thyme, carrots, and potatoes.
Cover and simmer on low heat for 2.5 hours until the beef is tender.
Whisk flour, baking powder, and a pinch of salt in a bowl, then stir in milk to form a soft dough.
Drop spoonfuls of dumpling dough onto the simmering stew.
Cover tightly and steam for 15-20 minutes until the dumplings are puffed and set.

Notes

Ensure the lid stays tightly closed while the dumplings steam to keep the environment hot and moist. If the stew is too thin, remove the lid for the final 10 minutes of cooking to reduce the liquid. Store leftovers in an airtight container for up to 3 days.
