Description
A perfectly portioned, comforting Italian-American dinner designed for two. This recipe eliminates the waste of large casseroles while ensuring a beautiful balance of crispy cheese edges and a gooey, flavorful center. Using simple, high-quality ingredients, this vegetarian dish is elegant enough for date night yet quick enough for a weeknight meal.
Ingredients
4 ounces ziti pasta
1.5 cups marinara sauce
0.5 cup ricotta cheese
1 cup mozzarella cheese, shredded
2 tablespoons parmesan cheese, freshly grated
1 teaspoon Italian seasoning
Instructions
Preheat your oven to 375 degrees Fahrenheit.
Boil a medium pot of salted water and cook the ziti until just before al dente.
Drain the pasta thoroughly.
In a medium bowl, combine the cooked ziti, marinara sauce, and Italian seasoning.
Spread half of the pasta mixture into a small greased ceramic baking dish.
Dollop the ricotta cheese over the pasta layer.
Top with the remaining pasta mixture.
Sprinkle with mozzarella and parmesan cheese.
Bake for 25 minutes or until the cheese is bubbly and lightly browned.
Notes
Penne or rigatoni are excellent substitutes if ziti is unavailable. Hand-shredded mozzarella melts better than pre-shredded varieties. Ensure the marinara sauce is free from meat and alcohol.
