Ingredients
15 oz chickpeas, drained
1/3 cup high-quality roasted tahini
3 tbsp freshly squeezed lemon juice
1 clove garlic, minced and germ removed
1/2 tsp sea salt
2–3 tbsp cold water
1 tbsp extra virgin olive oil
Instructions
Place the tahini and lemon juice into a food processor and blend for 60 seconds until the mixture is whipped and pale.
Scrape down the sides of the bowl to ensure a smooth base.
Add the minced garlic, salt, and extra virgin olive oil to the base.
Pulse the processor for 30 seconds to fully integrate the aromatics and scrape the bowl once more.
Add half of the chickpeas to the processor and blend until smooth.
Add the remaining chickpeas and process until creamy, adding cold water a tablespoon at a time to reach your desired consistency.
Notes
Using quality light-colored tahini is key to avoiding bitterness. The secret to the texture is the prolonged initial whipping of tahini and lemon before adding the chickpeas.
