Ingredients
2 cups apple cider (reduced to 1/2 cup)
2 cups all-purpose flour
2 tsp baking powder
1.5 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 cup unsalted butter, melted and cooled
3/4 cup brown sugar, packed
2 large eggs, room temperature
Instructions
Pour apple cider into a medium saucepan over medium-high heat and boil until reduced to 1/2 cup of syrup, then set aside to cool.
Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin.
In a medium bowl, whisk together the flour, baking powder, cinnamon, and nutmeg.
In a separate large bowl, whisk the melted butter, brown sugar, and eggs until smooth.
Stir the cooled cider reduction into the butter mixture.
Fold the dry ingredients into the wet ingredients until just combined.
Divide the batter evenly among the 12 muffin cups.
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Cool in the pan for 5 minutes before transferring to a wire rack.
Notes
Ensure the cider reduction is completely cooled before adding to the eggs to prevent premature scrambling. For a bakery-style finish, brush the tops with a little melted butter and dip into coarse sparkling sugar immediately after removing from the oven. Store in an airtight container at room temperature for up to 3 days.
