Description
Experience the cozy flavors of autumn with this dense, moist apple cider donut bread. By reducing fresh apple cider to a concentrated syrup, we pack every slice with intense orchard flavor. The loaf is finished with a buttery cinnamon-sugar crust that mimics the iconic crunch of a traditional fried donut, making it the perfect refined treat for breakfast or afternoon tea.
Ingredients
2 cups unfiltered apple cider
2 cups all-purpose flour
2 tsp baking powder
0.5 tsp baking soda
2 tsp ground cinnamon
0.5 tsp salt
0.5 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
0.5 cup buttermilk
Instructions
Preheat your oven to 350 degrees Fahrenheit and grease a standard loaf pan.
Simmer the apple cider in a saucepan over medium heat until it reduces to one-half cup.
Whisk flour, baking powder, baking soda, cinnamon, and salt in a bowl.
Cream the softened butter and three-quarters cup of sugar in a large mixing bowl until light and fluffy.
Beat in the eggs one at a time, then add the reduced cider and buttermilk.
Gradually stir in the dry ingredients until just combined.
Pour the batter into the loaf pan and smooth the top.
Bake for 50 minutes or until a toothpick comes out clean.
Brush the warm loaf with a little melted butter and dust with the remaining quarter cup of sugar mixed with a pinch of cinnamon.
