Description

These Apple Cider Cupcakes capture the essence of fall by utilizing a concentrated apple reduction that infuses each bite with deep orchard flavor. The moist, spiced cake batter is perfectly balanced with warm notes of cinnamon, nutmeg, and cloves. Topped with a silky cream cheese frosting, these cupcakes offer a sophisticated and comforting treat perfect for autumn gatherings, holiday parties, or a cozy afternoon snack at home.

Ingredients

Scale

2 cups apple cider (reduced to 1/2 cup)
1 3/4 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1/2 cup vegetable oil
1 cup brown sugar, packed
2 large eggs, room temperature
1 tsp pure vanilla extract

Instructions

Pour apple cider into a saucepan over medium heat and simmer until reduced to 1/2 cup, then cool completely.
Preheat oven to 350 degrees Fahrenheit and line a muffin tin with paper liners.
In a medium bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg, and cloves.
In a separate large bowl, cream together brown sugar and vegetable oil until smooth.
Add eggs one at a time to the oil mixture, beating well after each addition.
Stir in the cooled apple cider reduction and vanilla extract.
Gradually fold the dry ingredients into the wet mixture until just combined.
Divide the batter evenly into the prepared muffin tin.
Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
Allow to cool completely on a wire rack before frosting.

Notes

Ensure the apple cider is fully cooled before mixing into the batter to prevent the eggs from curdling. Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days. For the best flavor, use high-quality Ceylon cinnamon.
