Description

These Almond Pine Nut Cookies are soft, buttery, and made with fine almond flour and toasted pine nuts. Perfect with coffee or tea, these delicate cookies come together quickly and deliver rich nutty flavor in every bite.


Ingredients

  • 2 cups almond flour
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 1/4 cup pine nuts
  • 2 tablespoons powdered sugar for dusting

Instructions

  1. Preheat oven to 170°C (340°F) and line a baking tray with parchment paper.
  2. In a bowl, mix almond flour, sugar, and salt.
  3. Add egg and extracts. Stir until a soft dough forms.
  4. Shape dough into small walnut-sized balls and place on tray.
  5. Press pine nuts gently onto the top of each cookie.
  6. Bake for 12–15 minutes until edges turn lightly golden.
  7. Cool completely before dusting with powdered sugar.

Notes

Toast pine nuts lightly before using for deeper flavor. Avoid overbaking to keep centers soft. Store cookies in an airtight container for up to 5 days or freeze unbaked dough balls for later use.
