Ingredients

1.5 lb skinless chicken thighs
4 cloves garlic (minced or paste)
2 tbsp honey
3 tbsp low-sodium soy sauce (gluten-free if labeled)
1/4 cup water
1 tbsp olive oil (for pan-searing)


Instructions

Toss chicken thighs with minced garlic, honey, 1 tbsp soy sauce, and 1/4 cup water in a bowl. Set aside to marinate for 15 minutes
Heat the olive oil in a skillet over high heat. Sear chicken thighs skin-side up until golden brown, 5-7 minutes per side
Transfer chicken to a preheated 400°F (200°C) oven for 8-10 minutes while you reduce the marinade. Skim off excess fat from the skillet if needed
Boil the remaining marinade (3 tbsp soy sauce + excess liquid from chicken) over medium-high heat, stirring gently until thickened and glossy (2-3 minutes). Adjust for thickness if needed
Pour reduced glaze over the oven-seared chicken thighs and serve immediately

Notes

For a glossier sauce, reduce the remaining marinade more thoroughly but avoid stirring violently. Add 1 tsp sesame oil to the glaze for extra umami
Only use 1 tbsp+1/4 cup marinade for the thighs so the remaining sauce has enough liquid to reduce properly
If sauce is too thick, add up to 2 tbsp water during reduction
Opt for agave syrup to make a vegan version
Serve with jasmine rice and sautéed snow peas for a complete meal
Store leftovers in airtight containers in the refrigerator for up to 3 days, or freeze for 3 months. Reheat in the oven at 350°F (180°C) for 10-15 minutes
