Ingredients
1.2 lbs chicken thighs (boneless, skinless)
1 cup panko breadcrumbs
1 tbsp garlic powder
3 tbsp unsalted butter (room temperature)
1 tbsp herbs (lemon thyme and parsley, 50/50 fresh/chopped)
Salt to taste
Instructions
Pat chicken dry. Season both sides with garlic powder and salt.
Place panko in shallow dish. Evenly coat chicken pieces (1 minute per side).
In small bowl, gently fold herbs into softened butter until smooth.
Heat oven-safe skillet over medium. Load chicken into pan, arranging tightly for crowd flavor.
Cook 7-8 minutes until edges become golden. Flip and repeat.
Spread butter-herb mixture over chicken. Transfer to 400°F oven for 3-4 minutes.
