- Freshly ground black pepper
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh parsley
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Sauté red onion for 2–3 minutes until slightly softened.
- Add garlic and cook for 30 seconds.
- Add zucchini in a single layer and cook without stirring too much for 3–4 minutes.
- Stir gently and add bell pepper if using.
- Season with oregano, salt, and pepper.
- Cook another 4–5 minutes until tender-crisp.
- Remove from heat and drizzle with lemon juice.
- Sprinkle fresh parsley before serving.
Notes
