Description

This Zucchini Stir Fry is a quick and healthy Mediterranean dish made with fresh zucchini, garlic, olive oil, and lemon juice. Ready in just 20 minutes, this simple vegetable recipe works perfectly as a light main course or flavorful side dish for weeknight dinners.


Ingredients

  • 4 medium zucchinis, sliced into half-moons
  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 small red onion, thinly sliced
  • 1 red bell pepper, sliced (optional)
  • ½ teaspoon dried oregano
  • Salt to taste
  • Freshly ground black pepper
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Sauté red onion for 2–3 minutes until slightly softened.
  3. Add garlic and cook for 30 seconds.
  4. Add zucchini in a single layer and cook without stirring too much for 3–4 minutes.
  5. Stir gently and add bell pepper if using.
  6. Season with oregano, salt, and pepper.
  7. Cook another 4–5 minutes until tender-crisp.
  8. Remove from heat and drizzle with lemon juice.
  9. Sprinkle fresh parsley before serving.

Notes

Use a wide pan to prevent steaming. Do not overcook zucchini to keep texture firm. Add feta cheese or chili flakes for extra flavor. Store in refrigerator up to 3 days.
