Description
Zucchini Fritters are crispy Mediterranean patties made with grated zucchini, feta cheese, fresh herbs, eggs, and flour. Golden on the outside and soft inside, they are perfect as an appetizer or light meal.
Ingredients

- 3 medium zucchini (about 600g), grated
- 1 teaspoon salt
- 2 large eggs
- 1/2 cup (60g) all-purpose flour
- 1/2 cup (75g) crumbled feta cheese
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
- 2 green onions, sliced
- 1 garlic clove, minced
- Black pepper to taste
- Olive oil for frying
Instructions
- Grate zucchini and sprinkle with salt. Let sit 15–20 minutes.
- Squeeze out excess liquid thoroughly.
- Mix zucchini with eggs, flour, feta, herbs, garlic, and pepper.
- Heat olive oil in a frying pan over medium heat.
- Spoon mixture into pan and flatten slightly.
- Fry 3–4 minutes per side until golden brown.
- Drain on paper towels and serve warm.
Notes
Squeeze zucchini very well to prevent soggy fritters. Fry in small batches. Reheat in oven for best crispiness.
