- 1 1/2 cups all-purpose flour
- 1/4 cup powdered sugar
- 1/2 teaspoon salt
- 1/2 cup cold vegan butter, cubed
- 3–4 tablespoons ice water
- 1 1/2 cups full-fat coconut milk (chilled overnight)
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons cornstarch
- 2 cups fresh strawberries, sliced
- 2 tablespoons vegan strawberry jam
- 1 tablespoon lemon juice
Instructions
- Mix flour, powdered sugar, and salt in a bowl.
- Rub in cold vegan butter until crumbly.
- Add ice water gradually and form dough. Chill for 30 minutes.
- Roll dough and press into tart pan. Prick with fork.
- Bake at 180°C (350°F) for 18-20 minutes until golden. Cool completely.
- Cook coconut cream, powdered sugar, vanilla, and cornstarch over medium heat until thick.
- Pour filling into cooled crust and chill for 1 hour.
- Arrange strawberries on top.
- Warm jam with lemon juice and brush over strawberries.
- Chill 30 minutes before serving.
Notes
Chill coconut milk overnight and use only the thick cream for best texture. Keep crust ingredients cold to ensure a tender base. Store tart refrigerated up to 3 days. Avoid freezing as fresh strawberries lose texture.
