Description

This Vegan Strawberry Tart is fresh, creamy, and beautifully simple. It features a tender plant-based crust, silky coconut cream filling, and sweet fresh strawberries glazed to perfection. Perfect for spring gatherings, summer desserts, or whenever you crave a light yet indulgent vegan treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 teaspoon salt
  • 1/2 cup cold vegan butter, cubed
  • 34 tablespoons ice water
  • 1 1/2 cups full-fat coconut milk (chilled overnight)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons cornstarch
  • 2 cups fresh strawberries, sliced
  • 2 tablespoons vegan strawberry jam
  • 1 tablespoon lemon juice

Instructions

  1. Mix flour, powdered sugar, and salt in a bowl.
  2. Rub in cold vegan butter until crumbly.
  3. Add ice water gradually and form dough. Chill for 30 minutes.
  4. Roll dough and press into tart pan. Prick with fork.
  5. Bake at 180°C (350°F) for 18-20 minutes until golden. Cool completely.
  6. Cook coconut cream, powdered sugar, vanilla, and cornstarch over medium heat until thick.
  7. Pour filling into cooled crust and chill for 1 hour.
  8. Arrange strawberries on top.
  9. Warm jam with lemon juice and brush over strawberries.
  10. Chill 30 minutes before serving.

Notes

Chill coconut milk overnight and use only the thick cream for best texture. Keep crust ingredients cold to ensure a tender base. Store tart refrigerated up to 3 days. Avoid freezing as fresh strawberries lose texture.
