  • 3 large eggs
  • 100 g granulated sugar (1/2 cup)
  • 1 teaspoon pure vanilla extract
  • 120 g all-purpose flour (1 cup)
  • 300 ml whole milk (1 1/4 cups)
  • 60 ml heavy cream (1/4 cup)
  • 1 tablespoon melted butter (plus extra for greasing)
  • Pinch of salt
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 180°C (350°F) and generously butter a 9-inch round baking dish.
  2. Spread the pitted cherries evenly across the bottom of the prepared dish.
  3. In a large bowl, whisk together eggs, sugar, and vanilla extract until pale and slightly frothy.
  4. Sift in flour and salt, then whisk gently until smooth and lump-free.
  5. Slowly pour in the milk and heavy cream while whisking continuously.
  6. Stir in the melted butter and mix until the batter resembles a thin crepe batter.
  7. Pour the batter evenly over the cherries in the baking dish.
  8. Bake for 35–45 minutes until puffed and golden brown, with a slight jiggle in the center.
  9. Allow to cool for 20 minutes before dusting generously with powdered sugar and serving.

Notes

Use fresh seasonal cherries for the best flavor and texture. If using frozen cherries, thaw and drain them thoroughly before baking. Serve slightly warm or at room temperature. Store leftovers covered in the refrigerator for up to 3 days. Reheat gently in the oven at 160°C (320°F) for best texture. You may substitute cherries with raspberries, plums, or sliced pears for variation.
