- 1 whole chicken (1.5 kg / 3–4 lbs)
- 10 cups water
- 1 large onion, halved
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, crushed
- 2 bay leaves
- 1 teaspoon black peppercorns
- 1 tablespoon salt
- 1 cup egg noodles
- 1 cup shredded cooked chicken
- 1 carrot, finely sliced
- 1 celery stalk, finely chopped
- Juice of ½ lemon
- 2 tablespoons fresh parsley, chopped
Instructions
- Place whole chicken in a large pot and cover with water.
- Add onion, carrots, celery, garlic, bay leaves, peppercorns, and salt.
- Bring to a gentle boil and skim foam.
- Reduce heat and simmer for 60–75 minutes.
- Remove chicken and strain broth.
- Shred chicken meat.
- Return broth to pot and bring to simmer.
- Add sliced carrot and celery and cook 5–7 minutes.
- Add egg noodles and cook until tender.
- Stir in shredded chicken.
- Add lemon juice and parsley.
- Taste, adjust seasoning, and serve warm.
Notes
Simmer gently for a clear, flavorful broth. Store noodles separately if freezing. Add extra lemon for brightness and freshness.
