Description

This Traditional Chicken Noodle Soup features a rich homemade broth made from a whole chicken, fresh vegetables, tender egg noodles, and a touch of lemon. It’s a classic comfort food perfect for cold days, family dinners, or when you need a nourishing meal.


Ingredients

  • 1 whole chicken (1.5 kg / 34 lbs)
  • 10 cups water
  • 1 large onion, halved
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, crushed
  • 2 bay leaves
  • 1 teaspoon black peppercorns
  • 1 tablespoon salt
  • 1 cup egg noodles
  • 1 cup shredded cooked chicken
  • 1 carrot, finely sliced
  • 1 celery stalk, finely chopped
  • Juice of ½ lemon
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place whole chicken in a large pot and cover with water.
  2. Add onion, carrots, celery, garlic, bay leaves, peppercorns, and salt.
  3. Bring to a gentle boil and skim foam.
  4. Reduce heat and simmer for 60–75 minutes.
  5. Remove chicken and strain broth.
  6. Shred chicken meat.
  7. Return broth to pot and bring to simmer.
  8. Add sliced carrot and celery and cook 5–7 minutes.
  9. Add egg noodles and cook until tender.
  10. Stir in shredded chicken.
  11. Add lemon juice and parsley.
  12. Taste, adjust seasoning, and serve warm.

Notes

Simmer gently for a clear, flavorful broth. Store noodles separately if freezing. Add extra lemon for brightness and freshness.
