  • 1 ½ cups crushed digestive biscuits or graham crackers
  • ½ cup melted unsalted butter
  • 2 tablespoons sugar
  • 750g full-fat cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 2 tablespoons all-purpose flour

Instructions

  1. Preheat oven to 170°C (325°F).
  2. Mix crushed biscuits, melted butter, and sugar. Press into a springform pan.
  3. Bake crust for 10 minutes and cool.
  4. Beat cream cheese until smooth.
  5. Add sugar and mix gently.
  6. Add eggs one at a time, mixing slowly.
  7. Stir in sour cream, vanilla, lemon juice, and flour.
  8. Pour filling over crust.
  9. Wrap pan with foil and place in water bath.
  10. Bake 55–65 minutes until center slightly jiggles.
  11. Cool slowly in oven with door slightly open.
  12. Refrigerate at least 4 hours before serving.
