- 4 medium zucchinis
- 2 tablespoons olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup cooked rice
- 250g ground beef or lamb (optional)
- 1 cup diced tomatoes
- ¼ cup chopped fresh parsley
- 2 tablespoons chopped fresh dill
- ½ teaspoon dried oregano
- Salt and black pepper to taste
- ½ cup crumbled feta cheese
- ½ cup shredded mozzarella
Instructions
- Preheat oven to 180°C (350°F).
- Slice zucchinis lengthwise and scoop out centers. Chop the flesh.
- Sauté onion and garlic in olive oil.
- Add meat if using and cook until browned.
- Stir in chopped zucchini flesh, tomatoes, rice, herbs, salt, and pepper.
- Fill zucchini shells with mixture.
- Top with feta and mozzarella.
- Cover and bake 30 minutes, then uncover and bake 15–20 minutes more until golden.
Notes
Substitute quinoa for rice for a gluten-free version. Add pine nuts for texture. Store leftovers in the refrigerator up to 3 days and reheat gently before serving.
