Description

This Strawberry Tart with Custard features a buttery homemade crust filled with silky vanilla custard and topped with fresh juicy strawberries. It’s an elegant yet simple dessert perfect for spring gatherings, afternoon coffee, or family celebrations.


Ingredients

  • 2 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 cup cold unsalted butter, cubed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons cold water
  • Pinch of salt
  • 2 ½ cups whole milk
  • ½ cup granulated sugar
  • 4 egg yolks
  • ¼ cup cornstarch
  • 2 tablespoons unsalted butter
  • 2 teaspoons vanilla extract
  • 500 g fresh strawberries, sliced
  • 2 tablespoons strawberry jam
  • 1 tablespoon water

Instructions

  1. Mix flour, sugar, and salt. Rub in cold butter until crumbly.
  2. Add egg and vanilla. Add water gradually until dough forms.
  3. Chill dough for 30 minutes.
  4. Roll out dough and place into tart pan.
  5. Bake at 180°C (350°F) for 25 minutes until golden.
  6. Heat milk until warm.
  7. Whisk egg yolks, sugar, and cornstarch.
  8. Slowly add warm milk, then cook until thick.
  9. Stir in butter and vanilla.
  10. Pour custard into cooled crust.
  11. Arrange strawberries on top.
  12. Heat jam with water and brush over strawberries.
  13. Chill for 2 hours before serving.

Notes

Use fresh, fragrant strawberries for best flavor. Chill the tart completely before slicing. Store in refrigerator up to 3 days. You can prepare the tart shell one day ahead.
