- ½ cup granulated sugar
- 1 cup cold unsalted butter, cubed
- 1 large egg

- Pinch of salt
- 2 ½ cups whole milk
- ½ cup granulated sugar
- 4 egg yolks
- ¼ cup cornstarch
- 2 tablespoons unsalted butter
- 2 teaspoons vanilla extract
- 500 g fresh strawberries, sliced
- 2 tablespoons strawberry jam
- 1 tablespoon water
Instructions
- Mix flour, sugar, and salt. Rub in cold butter until crumbly.
- Add egg and vanilla. Add water gradually until dough forms.
- Chill dough for 30 minutes.
- Roll out dough and place into tart pan.
- Bake at 180°C (350°F) for 25 minutes until golden.
- Heat milk until warm.
- Whisk egg yolks, sugar, and cornstarch.
- Slowly add warm milk, then cook until thick.
- Stir in butter and vanilla.
- Pour custard into cooled crust.
- Arrange strawberries on top.
- Heat jam with water and brush over strawberries.
- Chill for 2 hours before serving.
Notes
Use fresh, fragrant strawberries for best flavor. Chill the tart completely before slicing. Store in refrigerator up to 3 days. You can prepare the tart shell one day ahead.
