- 1 1/4 cups all-purpose flour
- 1/2 cup cold unsalted butter, cubed
- 1/4 cup powdered sugar
- 1 egg yolk
- 2 tablespoons cold water
- Pinch of salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 cup almond flour
- 2 eggs
- 1 teaspoon vanilla extract
- 1 tablespoon all-purpose flour
- 2 cups fresh strawberries, hulled and halved
- 2 tablespoons apricot jam
- 1 tablespoon water
Instructions
- Mix flour, powdered sugar, and salt. Rub in cold butter until crumbly.
- Add egg yolk and cold water. Form dough and chill 30 minutes.
- Preheat oven to 180°C (350°F). Roll dough into a tart pan and chill again.
- Beat softened butter and sugar until creamy. Add eggs one at a time.
- Mix in almond flour, flour, vanilla, and salt.
- Spread almond cream into tart shell.
- Bake 25–30 minutes until golden. Cool completely.
- Arrange strawberries on top.
- Warm apricot jam with water and brush over strawberries.
- Slice and serve.
Notes
Keep butter cold for a flaky crust. Chill dough to prevent shrinking. Substitute raspberries if desired. Store refrigerated up to 3 days.
