Description

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 cup cold unsalted butter, cubed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2 cups whole milk
  • 1/2 cup sugar
  • 3 egg yolks
  • 3 tablespoons cornstarch
  • 1 tablespoon butter
  • 500g fresh strawberries, sliced
  • 2 tablespoons apricot jam
  • 1 tablespoon warm water

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Mix flour, sugar, salt, and butter until crumbly.
  3. Add egg and vanilla, form dough, chill 30 minutes.
  4. Roll out dough, press into tart pan, prick base.
  5. Bake 18-22 minutes until golden. Cool completely.
  6. Heat milk until warm.
  7. Whisk egg yolks, sugar, and cornstarch.
  8. Slowly add warm milk, return to saucepan, cook until thick.
  9. Add butter and vanilla. Cool.
  10. Spread custard into crust.
  11. Arrange strawberries on top.
  12. Brush with apricot glaze. Chill before serving.

Notes

Use ripe, fragrant strawberries for best flavor. Keep butter cold for flaky crust. Store in refrigerator up to 3 days. Avoid freezing for best texture.
