Ingredients
- 6 cups fresh baby spinach
- 2 cups fresh strawberries, sliced
- 1/2 cup walnuts or pecans
- 1/4 cup thinly sliced red onion
- 1/3 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- Salt to taste
- Black pepper to taste
Instructions
- Wash and dry the baby spinach thoroughly.
- Remove the tops from the strawberries and slice them.
- Toast the walnuts or pecans in a dry skillet over medium heat for 2–3 minutes until fragrant.
- In a small bowl whisk together olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper.
- Place spinach, strawberries, and red onion in a large bowl.
- Add toasted nuts and drizzle the dressing over the salad.
- Toss gently until everything is evenly coated.
- Sprinkle feta cheese on top and serve immediately.
Notes
Toast the nuts to enhance their flavor. You can substitute goat cheese for feta if you prefer a creamier taste. For a heartier meal, add grilled chicken or shrimp. Store leftover dressing in the refrigerator for up to 3 days.
