Description

This fresh strawberry spinach salad with nuts combines sweet strawberries, tender spinach, crunchy toasted nuts, and creamy feta cheese with a light honey balsamic dressing. It’s a quick, healthy, and vibrant salad perfect for spring lunches, light dinners, or as a refreshing side dish.


Ingredients

  • 6 cups fresh baby spinach
  • 2 cups fresh strawberries, sliced
  • 1/2 cup walnuts or pecans
  • 1/4 cup thinly sliced red onion
  • 1/3 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Wash and dry the baby spinach thoroughly.
  2. Remove the tops from the strawberries and slice them.
  3. Toast the walnuts or pecans in a dry skillet over medium heat for 2–3 minutes until fragrant.
  4. In a small bowl whisk together olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper.
  5. Place spinach, strawberries, and red onion in a large bowl.
  6. Add toasted nuts and drizzle the dressing over the salad.
  7. Toss gently until everything is evenly coated.
  8. Sprinkle feta cheese on top and serve immediately.

Notes

Toast the nuts to enhance their flavor. You can substitute goat cheese for feta if you prefer a creamier taste. For a heartier meal, add grilled chicken or shrimp. Store leftover dressing in the refrigerator for up to 3 days.
