Description

This Strawberry Spinach Salad with Dressing is a fresh and vibrant dish made with tender baby spinach, sweet strawberries, crunchy nuts, and creamy feta cheese. Ingredients

  • 5 cups fresh baby spinach
  • 2 cups fresh strawberries, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup toasted walnuts or pecans
  • 1/4 cup dried cranberries
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and dry the baby spinach thoroughly.
  2. Slice the strawberries and thinly slice the red onion.
  3. Toast walnuts or pecans in a dry skillet over medium heat for 3–4 minutes until fragrant.
  4. In a small bowl whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper.
  5. Add spinach, strawberries, onion, nuts, and cranberries to a large bowl.
  6. Sprinkle crumbled feta cheese over the salad.
  7. Drizzle the dressing over the salad.
  8. Toss gently until everything is lightly coated and serve immediately.

Notes

For a protein boost add grilled chicken or grilled shrimp. Goat cheese can replace feta for a creamier flavor. Keep dressing separate if making ahead. Store leftovers in an airtight container in the refrigerator for up to 24 hours.
