Ingredients
- 5 cups fresh baby spinach
- 2 cups fresh strawberries, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/2 cup toasted walnuts or pecans
- 1/4 cup dried cranberries
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Wash and dry the baby spinach thoroughly.
- Slice the strawberries and thinly slice the red onion.
- Toast walnuts or pecans in a dry skillet over medium heat for 3–4 minutes until fragrant.
- In a small bowl whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper.
- Add spinach, strawberries, onion, nuts, and cranberries to a large bowl.
- Sprinkle crumbled feta cheese over the salad.
- Drizzle the dressing over the salad.
- Toss gently until everything is lightly coated and serve immediately.
Notes
For a protein boost add grilled chicken or grilled shrimp. Goat cheese can replace feta for a creamier flavor. Keep dressing separate if making ahead. Store leftovers in an airtight container in the refrigerator for up to 24 hours.
