Description

  • 2 cups fresh strawberries, sliced
  • 3 tablespoons granulated sugar
  • 1 tablespoon brown sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1 egg
  • 1 tablespoon milk
  • Powdered sugar for dusting
  • 2 tablespoons strawberry jam (optional, for glaze)

Instructions

  1. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Place puff pastry on the baking sheet and lightly roll to smooth.
  3. Score a 1-inch border around the edges without cutting all the way through.
  4. In a bowl, mix strawberries with granulated sugar, brown sugar, vanilla, and cornstarch.
  5. Spread the strawberry mixture evenly inside the border.
  6. Whisk egg with milk and brush along the pastry edges.
  7. Bake for 20–25 minutes until golden brown and puffed.
  8. Warm strawberry jam and brush over fruit for shine. Dust with powdered sugar before serving.

Notes

Pat strawberries dry before mixing to avoid excess moisture. Serve slightly warm for best flavor and texture. Store leftovers in the refrigerator for up to 2 days and reheat in the oven to maintain crispness. You can substitute raspberries or peaches when in season.
