Ingredients
- 5 cups fresh baby spinach
- 1½ cups fresh strawberries, sliced
- ½ small red onion, thinly sliced
- ½ cup crumbled feta cheese
- ½ cup toasted pecans or walnuts
- ¼ cup dried cranberries
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Pinch of salt
- Pinch of black pepper
Instructions
- Wash and dry the spinach and place it in a large salad bowl.
- Slice the strawberries and add them to the bowl.
- Thinly slice the red onion and sprinkle over the salad.
- Toast the pecans or walnuts in a dry skillet for 2–3 minutes until fragrant.
- In a small bowl whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
- Add feta cheese, toasted nuts, and dried cranberries to the salad.
- Drizzle dressing over the salad just before serving.
- Toss gently and serve immediately.
Notes
Use fresh ripe strawberries for the best flavor. Toasting the nuts adds extra crunch and aroma. For a vegan version replace feta with avocado or plant-based cheese. Add grilled chicken or shrimp if you want to turn the salad into a full meal.
