Description

This fresh Spring Strawberry Spinach Salad combines sweet strawberries, tender spinach, crunchy toasted nuts, and creamy feta cheese tossed in a simple homemade balsamic dressing. It’s a light, colorful, and refreshing salad perfect for spring lunches, healthy dinners, or beautiful gatherings.


Ingredients

  • 5 cups fresh baby spinach
  • 1½ cups fresh strawberries, sliced
  • ½ small red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • ½ cup toasted pecans or walnuts
  • ¼ cup dried cranberries
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Pinch of salt
  • Pinch of black pepper

Instructions

  1. Wash and dry the spinach and place it in a large salad bowl.
  2. Slice the strawberries and add them to the bowl.
  3. Thinly slice the red onion and sprinkle over the salad.
  4. Toast the pecans or walnuts in a dry skillet for 2–3 minutes until fragrant.
  5. In a small bowl whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
  6. Add feta cheese, toasted nuts, and dried cranberries to the salad.
  7. Drizzle dressing over the salad just before serving.
  8. Toss gently and serve immediately.

Notes

Use fresh ripe strawberries for the best flavor. Toasting the nuts adds extra crunch and aroma. For a vegan version replace feta with avocado or plant-based cheese. Add grilled chicken or shrimp if you want to turn the salad into a full meal.
