- 2 cups sweet peas (fresh or frozen, thawed)
- 1 cup cucumber, diced
- 1/2 cup radishes, thinly sliced
- 1/3 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup Greek yogurt
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- Salt and black pepper to taste
Instructions
- Bring a pot of water to a boil and blanch the peas for 2β3 minutes, then transfer to cold water and drain.
- In a large bowl, combine peas, cucumber, radishes, red onion, parsley, and mint.
- In a small bowl, whisk together Greek yogurt, olive oil, lemon juice, lemon zest, salt, and pepper.
- Pour the dressing over the salad and mix gently until well combined.
- Add crumbled feta and fold carefully.
- Taste and adjust seasoning if needed, then serve fresh or chilled.
