Description

Spring Pea Salad is a fresh, vibrant, and easy recipe made with sweet peas, crisp vegetables, creamy feta, and a light lemon dressing. It’s perfect for spring gatherings, healthy lunches, or a refreshing side dish.


Ingredients

  • 2 cups sweet peas (fresh or frozen, thawed)
  • 1 cup cucumber, diced
  • 1/2 cup radishes, thinly sliced
  • 1/3 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • Salt and black pepper to taste

Instructions

  1. Bring a pot of water to a boil and blanch the peas for 2–3 minutes, then transfer to cold water and drain.
  2. In a large bowl, combine peas, cucumber, radishes, red onion, parsley, and mint.
  3. In a small bowl, whisk together Greek yogurt, olive oil, lemon juice, lemon zest, salt, and pepper.
  4. Pour the dressing over the salad and mix gently until well combined.
  5. Add crumbled feta and fold carefully.
  6. Taste and adjust seasoning if needed, then serve fresh or chilled.

Notes

  • Use fresh peas when in season for the sweetest flavor.
  • You can replace feta with goat cheese for a softer taste.
