Description

This fresh Spring Pea Salad with Mint is light, vibrant, and full of flavor. Sweet peas, aromatic mint, creamy feta, and a bright lemon dressing come together in a simple and refreshing dish perfect for spring and summer meals.


Ingredients

Scale
  • 3 cups fresh or frozen peas
  • 1/4 cup fresh mint leaves, chopped
  • 1/3 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 small shallot, finely chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Bring a pot of salted water to a boil.
  2. Add peas and cook for 2–3 minutes.
  3. Transfer peas to ice water to stop cooking.
  4. Drain and pat dry.
  5. In a bowl, combine peas, shallot, mint, and feta.
  6. In another bowl, whisk olive oil, lemon juice, zest, salt, and pepper.
  7. Pour dressing over salad.
  8. Toss gently to combine.
  9. Taste and adjust seasoning.
  10. Serve fresh or slightly chilled.

Notes

Use fresh peas for the best flavor. You can substitute feta with goat cheese. Add dressing just before serving to keep the salad fresh. Store leftovers in the fridge for up to 2 days.
