Description

This Spring Pea Salad with Lemon is fresh, vibrant, and full of flavor. Made with sweet peas, zesty lemon, fresh herbs, and creamy feta, it’s the perfect light dish for spring meals, gatherings, or healthy lunches.


Ingredients

  • 3 cups fresh or frozen peas
  • 1 small red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/3 cup feta cheese, crumbled
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Bring a pot of water to a boil and prepare an ice bath.
  2. Add peas to boiling water and cook for 2 minutes.
  3. Transfer peas immediately to ice water.
  4. Drain and pat dry.
  5. In a bowl, combine peas, onion, parsley, and mint.
  6. Add lemon zest, lemon juice, and olive oil.
  7. Season with salt and pepper.
  8. Toss gently to combine.
  9. Add feta cheese and mix lightly before serving.

Notes

Use fresh herbs for the best flavor. Do not overcook peas to keep them bright and crisp. Add feta just before serving. You can prepare the salad ahead but mix dressing last for freshness.
