  • 1/2 cup red onion, finely chopped
  • 1/2 cup cooked bacon, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/3 cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare the peas by thawing if frozen and patting dry.
  2. Finely chop the red onion and cook the bacon until crispy, then chop.
  3. In a small bowl, mix mayonnaise, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.
  4. In a large bowl, combine peas, onion, bacon, and cheese.
  5. Add the dressing and gently mix until well coated.
  6. Sprinkle parsley and mix lightly.
  7. Chill in the refrigerator for at least 30 minutes before serving.

Notes

For extra crunch, add sunflower seeds or chopped nuts. You can substitute turkey bacon for a lighter option. Store in an airtight container in the fridge for up to 3 days. Best served chilled.
