Description

This fresh and vibrant Spring Pea Salad Recipe combines sweet peas, creamy feta, crisp cucumber, and fragrant herbs with a bright lemon dressing. It’s a light, refreshing dish perfect for spring gatherings, quick lunches, or healthy side dishes.


Ingredients

  • 2 cups fresh or frozen peas
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup cucumber, diced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Bring a pot of water to a boil.
  2. Add peas and cook for 2–3 minutes.
  3. Drain and rinse with cold water.
  4. Let peas cool completely.
  5. In a bowl, combine peas, onion, cucumber, parsley, and mint.
  6. Drizzle olive oil and lemon juice.
  7. Season with salt and pepper.
  8. Add feta cheese and gently mix.
  9. Taste and adjust seasoning before serving.

Notes

Use fresh herbs for best flavor. Add feta just before serving for freshness. Store in fridge up to 2 days. Refresh with extra lemon juice before serving.
