  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 500 g (1 lb) ground beef
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon cayenne pepper (adjust to taste)
  • 1 tablespoon tomato paste
  • 800 g (28 oz) crushed tomatoes
  • 1 cup beef broth
  • 1 red bell pepper, diced
  • 1 can (400 g) kidney beans, drained and rinsed
  • 1 can (400 g) black beans, drained and rinsed
  • 1 teaspoon dried oregano
  • 1 teaspoon brown sugar (optional)
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large heavy pot over medium heat.
  2. Add chopped onion and cook for 5 minutes until soft.
  3. Stir in minced garlic and cook for 30 seconds.
  4. Add ground beef and break it apart with a spoon. Cook for 6–8 minutes until browned.
  5. Drain excess fat if necessary.
  6. Add salt, pepper, smoked paprika, cumin, chili powder, and cayenne. Cook for 1 minute to toast the spices.
  7. Stir in tomato paste until well combined.
  8. Pour in crushed tomatoes and beef broth.
  9. Add diced bell pepper, kidney beans, black beans, oregano, and brown sugar.
  10. Bring to a gentle boil, then reduce heat and simmer uncovered for 40–50 minutes, stirring occasionally.
  11. Taste and adjust seasoning before serving. Garnish with fresh cilantro.

Notes

For extra heat, add chopped fresh chili or increase cayenne pepper. For a milder version, reduce the cayenne. This chili tastes even better the next day as flavors deepen. Store in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat gently on the stovetop with a splash of water if needed.
