- 500g elbow macaroni
- 3 cups sharp cheddar cheese, shredded
- 1 cup mozzarella cheese
- 1/2 cup parmesan cheese
- 3 cups whole milk
- 2 large eggs
- 4 tablespoons butter
- 2 tablespoons flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
Instructions
- Cook macaroni in salted water until al dente.
- Drain and set aside.
- Melt butter in a saucepan and whisk in flour to form a roux.
- Slowly add milk while stirring until smooth and thickened.
- Add seasoning and stir in half of the cheese.
- Whisk eggs in a separate bowl and temper with warm sauce.
- Combine pasta, sauce, and eggs.
- Layer in baking dish with remaining cheese.
- Bake at 180°C (350°F) for 30–35 minutes until golden.
Notes
Use sharp cheddar for strong flavor. Do not overcook pasta. Add a splash of milk when reheating to keep it creamy. You can prepare ahead and bake later.
