Ingredients
- 5 cups fresh baby spinach
- 2 cups fresh strawberries, sliced
- 1/4 cup red onion, thinly sliced
- 1/3 cup crumbled feta cheese
- 1/3 cup sliced almonds or walnuts
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt to taste
- Freshly ground black pepper
Instructions
- Wash and thoroughly dry the baby spinach and place it in a large bowl.
- Slice the strawberries and thinly slice the red onion.
- Toast the almonds or walnuts in a dry skillet over medium heat for about 3 minutes until fragrant.
- In a small bowl whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper.
- Add strawberries, red onion, feta cheese, and toasted nuts to the spinach.
- Drizzle the dressing over the salad.
- Toss gently until everything is evenly coated and serve immediately.
Notes
Use fresh ripe strawberries for the best flavor. You can substitute goat cheese for feta if you prefer a creamier taste. Toasting the nuts enhances their flavor and adds extra crunch. If preparing ahead, store the dressing separately and toss the salad just before serving.
