Description

This Simple Rhubarb Pie Recipe features a flaky homemade butter crust filled with sweet and tangy fresh rhubarb. A classic spring dessert that balances bold flavor with comforting texture.


Ingredients

  • 2 1/2 cups (315g) all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup (230g) cold unsalted butter, cubed
  • 68 tablespoons ice water
  • 5 cups (600g) fresh rhubarb, chopped
  • 1 1/4 cups (250g) granulated sugar
  • 1/4 cup (30g) all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon butter for dotting

Instructions

  1. Mix flour, salt, and sugar. Cut in cold butter until crumbly.
  2. Add ice water gradually and form dough. Chill 30 minutes.
  3. Combine rhubarb, sugar, flour, cornstarch, vanilla, and lemon juice.
  4. Roll out bottom crust and place in pie dish.
  5. Add rhubarb filling and dot with butter.
  6. Cover with top crust, seal edges, and cut slits.
  7. Bake at 190°C (375°F) for 50–60 minutes until golden and bubbling.
  8. Cool completely before slicing.

Notes

Let filling rest before baking to release juices. Cool pie fully for clean slices. Sprinkle sugar on crust for extra texture.
