Instructions

  1. In a bowl, mix 1 tablespoon olive oil, juice of 1 lemon, minced garlic, oregano, salt, and pepper.
  2. Coat the chicken breasts evenly with the marinade and let them rest for at least 20 minutes.
  3. Heat a grill pan over medium heat and cook the chicken for 6–7 minutes per side until fully cooked and golden.
  4. Remove the chicken from heat and let it rest for 5–10 minutes before slicing.
  5. In a large bowl, combine romaine lettuce, cherry tomatoes, cucumber, red onion, and parsley.
  6. In a small bowl, whisk together juice of 1 lemon, 3 tablespoons olive oil, honey, Dijon mustard, salt, and pepper to make the dressing.
  7. Slice the rested chicken into strips.
  8. Place the sliced chicken over the salad.
  9. Drizzle the lemon dressing evenly over the salad.
  10. Toss gently, sprinkle with feta if desired, and serve immediately.
