Description

Ingredients

  • 200g digestive biscuits or graham crackers
  • 1/2 cup (115g) unsalted butter, melted
  • 2 tablespoons sugar
  • 600g full-fat cream cheese, softened
  • 1 cup (200g) sugar
  • 3 large eggs, room temperature
  • 1 cup (240ml) heavy cream
  • 1 tablespoon vanilla extract
  • 1 tablespoon lemon juice
  • 2 tablespoons all-purpose flour

Instructions

  1. Preheat oven to 170°C (340°F).
  2. Mix crushed biscuits with melted butter and sugar.
  3. Press into springform pan and bake 10 minutes.
  4. Beat cream cheese until smooth, add sugar.
  5. Add eggs one at a time, mixing gently.
  6. Stir in cream, vanilla, lemon juice, and flour.
  7. Pour filling over crust.
  8. Bake in water bath for 55–65 minutes.
  9. Cool slowly in oven, then refrigerate at least 4 hours.
