Ingredients
- 300 g pasta (spaghetti, fettuccine, or penne)
- 1 bunch fresh asparagus, trimmed and cut into 2-inch pieces
- 250 g mushrooms, sliced
- 3 cloves garlic, finely chopped
- 3 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/4 teaspoon chili flakes (optional)
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- Juice of half a lemon
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup pasta water and drain.
- Heat olive oil in a large skillet over medium heat. Add the sliced mushrooms and sauté for 5–6 minutes until golden brown.
- Add the chopped garlic and cook for 30 seconds until fragrant.
- Add the asparagus pieces and cook for 3–4 minutes until tender-crisp.
- Season with salt, black pepper, oregano, and chili flakes, stirring well to combine.
- Add the cooked pasta to the skillet and toss gently with the vegetables. Pour in a splash of reserved pasta water to create a light sauce.
- Remove from heat and stir in grated Parmesan cheese and lemon juice until well combined.
- Garnish with fresh parsley and serve warm with extra Parmesan if desired.
Notes
For best results, use fresh asparagus and high-quality Parmesan cheese. You can substitute Pecorino Romano for a sharper flavor. Add grilled chicken or shrimp for extra protein. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently with a splash of water or olive oil.
