Description

This Simple Asparagus Mushroom Pasta is a quick and comforting dish made with fresh asparagus, earthy mushrooms, garlic, and Parmesan cheese. Perfect for busy weeknights or a cozy family dinner, this easy pasta recipe is full of fresh flavors and ready in just 25 minutes.


Ingredients

  • 300 g pasta (spaghetti, fettuccine, or penne)
  • 1 bunch fresh asparagus, trimmed and cut into 2-inch pieces
  • 250 g mushrooms, sliced
  • 3 cloves garlic, finely chopped
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon chili flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Juice of half a lemon

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup pasta water and drain.
  2. Heat olive oil in a large skillet over medium heat. Add the sliced mushrooms and sauté for 5–6 minutes until golden brown.
  3. Add the chopped garlic and cook for 30 seconds until fragrant.
  4. Add the asparagus pieces and cook for 3–4 minutes until tender-crisp.
  5. Season with salt, black pepper, oregano, and chili flakes, stirring well to combine.
  6. Add the cooked pasta to the skillet and toss gently with the vegetables. Pour in a splash of reserved pasta water to create a light sauce.
  7. Remove from heat and stir in grated Parmesan cheese and lemon juice until well combined.
  8. Garnish with fresh parsley and serve warm with extra Parmesan if desired.

Notes

For best results, use fresh asparagus and high-quality Parmesan cheese. You can substitute Pecorino Romano for a sharper flavor. Add grilled chicken or shrimp for extra protein. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently with a splash of water or olive oil.
